Our Island Distillery

is located just a few hundred yards from Old Town Bay, and we benefit from all the coastal influences that sweep in from the surrounding Atlantic Ocean, delivering real character to our Island Whisky. We sit under the truly historic Ennor Castle – the only medieval castle on Scilly – where now, new history is being made with the first whisky ever to be produced on the isles of Scilly. This landmark whisky truly captures the essence of these wild isles, and with the Atlantic providing the island’s water supply, which we use to attain the whisky’s alcohol level, so you truly experience a little taste of Scilly in every sip!

Sir Cloudesley Shovell

The Atlantic Ocean surrounding our islands has also taken its toll on many ships over hundreds of years.  Perhaps the most significant of these was the loss of HMS Association, with Sir Cloudesley Shovell on board (then Commander of the Queens Fleet) and sadly meeting his fate on that significant date in 1707. Buried at nearby Porth Hellick for a short time, we duly pay homage to this noble man, as our Still is named Sir Cloudesley Shovell, in which all our whisky is distilled.  We even filled our first oak cask with batch No.1 on 2nd November, the same calendar date of that notable maritime event. So, we’ll raise a glass next Monday to Sir Cloudesley Shovell at his memorial stone at Porth Hellick Cove, just a short walk from our distillery.

Red Ensign Flag

The Ensign is the maritime flag flown at a ship’s stern whilst in their home port, as it denotes the ship’s origin. Here on the Isles of Scilly, we see this Ensign at the rear of the much loved Scillonian III ship, along with all the vibrantly coloured tripper boats of the island’s Boatman’s Association, resting in St Mary’s harbour.  So it is, that we celebrate our maritime location and heritage by taking inspiration from this poignant flag, as we use its distinctive, vibrant, red colour in so many aspects of our Island Whisky, from the design of our special new bottles, to all the other packaging elements.

ISLAND WHISKY

Our isles endure all the Atlantic Ocean brings, including long spells of thick fog, which has dealt a heavy blow to many a fine vessel in years gone by.  Our new bespoke bottle design captures this haunting, thick fog, whilst the crystal clear glass stopper as its crown stands bright, reflective of the all-important bright glow of Bishop Rock lighthouse, a vital shining beacon to alert the approaching ships still to this day. Then through the bottle’s lifting fog, the pure, crystal, caramel tones of our fine spirit are revealed.
