Island Whisky Is Created - 2nd November 2021

The first whisky to be made on the Isles of Scilly, indeed the first whisky ever to be made on an English island (as far as our research reveals!) Our whisky is produced totally here on St Mary’s, as we once again work with an Island Maker, collaborating with Jen at Ales of Scilly, to produce our “wash”, made with water from the Atlantic. 

Distilled today in “Sir Cloudesley Shovell”, our new still, so named, to remember the Admiral of the Fleet and the tragic loss of his ship, HMS Association and crew near Bishop Rock 314 years ago, 2nd November 1707, hence creating our Island Whisky® today.

We’ve spent over a year researching and developing our desired flavour profile, and selecting the finest oak casks, and now we must wait at least 3 years and 1 day, for our whisky to mellow and imbibe character from it’s time with the oak, until we can unveil the finished amber spirit! We’ll then raise a glass at the memorial stone to Sir Cloudesley Shovell at Porth Hellick Cove, a short walk from our distillery.
